Aegidius I

Aegidius I Vintage is one of our cru Vermentino.

Aegidius I Vintage and one of our cru Vermentino; it is our interpretation of the vermentino of yesteryear in a modern way. It comes from an accurate fermentation on the skins of the best grapes derived from our vineyards harvested late. Once the fermentation process in peel is over, it follows the malolactic fermentation and then the process rests on the lees until March when it is bottled. It’s a wine with straw yellow to golden colour, intense aroma and complex, it opens with aromas reminiscent of spices and ripe fruit with nice and balsamic mineral notes.

In the mouth it is full and complex with great structure, with warm notes, the ending surprises us with a slight tannic structure that reminds us of the fermentation on the skins. Aegidius I Vintage thanks to his body and this light tannins is ideal as an accompaniment to fishdishes and dishes of the Ligurian hinterland such as rabbit with olives and tripe stew.
