Aegidius I Vintage: one of our Vermentino crus

Our interpretation of an old fashioned Vermentino in a modern key. It comes from an accurate fermentation process that happens on the skins of the best grapes coming from our late harvested vineyards. At the end of such fermentation process, the malolactic fermentation follows and then rests on the noble lees until March, when it happens to be bottled. Straw yellow wine leading to golden, having an intense and complex aroma, it opens with a scent reminiscent of spices and ripe fruit with pleasant mineral and balsamic notes. In the mouth, it is full and complex with great structure and warm notes that ends surprisingly with a slight tannicity – the one that reminds us of fermentation on the skins.

Aegidius I Vintage Vermentino Colli di Luni Doc, thanks to its body and light tannins, is ideal as an accompaniment to structured fish dishes and Ligurian hinterland dishes such as rabbit with olives and stewed tripe.
